Quinoa has become by BFF since I changed the way I eat earlier this year. I stopped eating some of my favorite things, pasta being one of the big ones. I knew this was going to be a gaping void in my life, especially since plain pasta with butter and salt is one of my favorite lazy indulgences.
It may be somewhat disgusting, and to be honest I always felt a bit ill after binging on it, but it satisfies something deep within my only-child psyche. My mom called it “buttered noodles” and it’s what she gave me on nights when she was going out and cooking only for me (that or sunny-side-up eggs with toast, a.k.a. “dippy eggs,” another favorite).
Recently I had a strong craving for butter, salt and pasta after making it for Frida (I wasn’t even going out), and while staring into that bowl of glistening carbohydrates and salt I was overcome. But instead of caving, I had a eureka moment: If I put butter and salt on quinoa, would it deliver that comfort-food satisfaction? The answer is yes, yes indeed.
That got me thinking: what else can you do with this magic grain that’s actually not a grain but a seed? Everything I’ve tried so far has been delicious, and these dishes are just the thing with cooler temps coming soon. Here are some of my favorites:
