If you’re not Persian or don’t have friends or family members who are, you might not know that ghormeh sabzi is basically the national dish of Iran. It’s a stew of four or five different herbs, including parsley, cilantro, chives, leeks and fenugreek, along with red beans and beef. The husband lets it slow cook all day. It’s served over delicious Persian rice, which is a whole thing unto itself.
I didn’t always like ghormeh sabzi—partly because I was pescatarian, and party because I didn’t understand the herbs and spices. But now I think it’s delicious and that it deserves an outfit. Shop the ingredients below! Some of the pieces are a little expensive so I included some options:
