I’ve been eating A LOT of salad lately, which is all good except for the fact that all my salads are all pretty much the same. The family is hecka bored and I am too, come to think of it. So, especially with summer coming, I was excited to find this chopped detox salad recipe. It feels like the time for a change.
The only thing I’m switching up in the recipe is the dressing: I’m nixing the onion because I HATE raw onion. Just hate it, though my husband and most of the rest of the world seems to love it. And I might also go without the garlic depending on my mood. Sometimes it does a number on my stomach, but sometimes I kind of love it. And I love fennel! It’s one of those veggies I always forget about, so I’m excited to get it into a regular rotation. And any salad with pistachios is fine by me. Lastly, I might add green olives? I rarely make a salad without olives.
